Beef Skewers with Lemon Parsley Chimichurri

I am all about grilling! It’s so simple to prepare and the food always tastes amazing. I love buying these beef skewers from my local store because the prep work is already done for me, they cook faster and I find the meat really nice and tender.

I decided to jazz these skewers up with a lemon parsley chimichurri. It is so fresh and summery. Serve over a bed of couscous, or rice, or greens and you have yourself a perfect summer meal.

Beef Skewers with Lemon Parsley Chimichurri

Yield: 2-4 servings

INGREDIENTS:
4 beef skewers, store bought
2 cups couscous, cooked
Salt/pepper, to taste
Chimichurri
Handful of parsley + 1 tbsp extra
Juice of 1/2 lemon
1 clove garlic
Pinch red pepper flakes, can add more for spice
1/4 cup olive oil

DIRECTIONS:
1. In a food processor, place all the chimichurri ingredients, excluding the extra tbsp of parsley, and whiz together.
2. Test the consistency. If you like it thinner, add more oil. If you like it thicker, add more parsley.
3. Place in fridge for a few hours or overnight.
4. Before serving, add the extra tbsp of fresh parsley into the chimichurri for added freshness.
5. Season beef skewers with salt and pepper. Place on grill and grill all sides until middle is medium- a few min a side.
6. Serve over a bed of couscous and drizzle the chimichurri on top. Serve more chimichurri on the side. Enjoy!

Note: You can use the chimichurri recipe as a guideline. If you like garlic, add another clove, if you like spice, add more red pepper flakes. I like it mild and lemony so this works for me.
