Canada's Wonderland Funnel Cake

During these crazy quarantine times, a lot of local businesses are releasing their recipes. Canada’s Wonderland has released their funnel cake recipe and I could not be more excited!

I have tried many a funnel cake, and by far, Canada’s Wonderland has the best one. I changed up the strawberry sauce recipe as it had some complicated ingredients I did not have- but it still came out amazing!

This may not be an everyday treat, but when you are in the mood, it is a funnel cake worth gossiping about!

Canada’s Wonderland Funnel Cake

Yield: 6-8 funnel cakes

INGREDIENTS:
Strawberry Sauce
1 bag frozen strawberries
3 cups water
1/2 cup strawberry Jam
1 cup sugar
1 tsp red food colouring
1 tbsp corn starch, mixed with 1 tbsp water to form slurry
Funnel Cake
2 large eggs, room temperature
1 cup 2% milk
1 cup water
1/2 tsp vanilla extract
1 3/4 cups all-purpose flour
1/4 cup sugar
3 tsp baking powder
1/4 tsp salt
Oil for deep frying (enough to cover funnel cake)
Confectionery (Icing) sugar
Vanilla ice cream, for serving

DIRECTIONS:
1. In a thick-bottom pot bring 1 L water to boil.
2. Add sugar, strawberry jam, red food colouring and bring to boil on medium heat.
3. Pour corn starch slurry slowly into the boiling strawberry jam-strawberry glaze mixture while stirring.
4. Make sure no lumps in it. Bring to boil and let boil until sauce thickens. Turn off the heat.
5. Place frozen strawberries in a heat-proof container. Pour boiling mixture over the frozen strawberries and mix well.
6. Cover with a lid and place in the refrigerator until strawberries are thawed. Mix gently before you serve it with funnel cakes.
7. Meanwhile, make the funnel cake batter. In a large bowl, mix all dry ingredients flour, sugar, baking powder and salt.
8. In a separate bowl, mix all wet ingredients eggs, milk, water and vanilla extract until well blended. 
9. Slowly combine dry ingredients into wet until completely mixed and there are no lumps. Do not over mix and make sure mixture is smooth.
10. Pour mixture into a pitcher.
11. In a thick-bottom pot, heat oil to 375°F.
12. Hold the jug with the funnel cake mixture 3-4 inches above the oil (wear an oven mitt for safety).
13. Pour about 1 cup funnel cake mixture in a spiral motion.
14. With a slotted spoon carefully fry each side about 2 minutes until golden brown. (Be careful not to splash hot oil)
15. Remove funnel cake and drain excess oil on paper towels.
16. Sprinkle with icing sugar, serve with strawberry sauce and vanilla ice cream. Enjoy!
