Instant Pot Orange Chicken

If you have been following me, you know I love to use the instant pot when I can. I kept seeing this orange chicken recipe over and over. I finally decided to try it, with my own spin of coarse.

It was quite delicious. Chicken chunks coated in a thick orange sauce. I added rice and broccoli once it was cooked. Perfect, easy, weeknight meal!

This orange chicken is so easy and flavourful, it is worth gossiping about!

Instant Pot Orange Chicken

Yield: 4 servings

INGREDIENTS:
2 large chicken breast, cubed
3/4 + 1/4 cup orange juice
Zest of 1 orange
1/4 cup BBQ sauce
2 tbsp soy sauce
1 tbsp honey
1/2 tsp garlic powder
1/4 tsp ginger powder
Salt/pepper, to taste
1 tsp corn starch
Sesame seeds/green onion, for garnish

DIRECTIONS:
1. Place 3/4 cup orange juice, orange zest, BBQ sauce, soy sauce, honey, garlic and ginger powders, salt and pepper into the instant pot. Stir until combined.
2. Add in cubed chicken and coat with the sauce.
3. Close lid and seal valve. Set on manual for 5 minutes. Quick release.
4. Open the lid and change the setting to saute. Add in 1/4 cup of orange juice mixed with the corn starch. Let simmer for a few minutes until sauce thickens.
5. Serve over rice and steamed broccoli. Garnish with sesame seeds and/or green onions. Enjoy!
