Latkes with Brie and Jam

This latke variation was my most anticipated and desired by my followers. A lot of people love the combination of brie and jam so I thought, why not put that on a latke.

The warmth of the latke slightly melts the brie and the jam topping gives it that added sweetness. You can use whatever jam you like, but I thought blackberry would be a unique and interesting flavour. Plus, to make it look extra special I halved blackberries and put it on top along with some thyme leaves.

This dish is easy yet beautiful and will have your guests gossiping all night long.

Latkes with Brie and Jam

Yield: 20 latkes

INGREDIENTS:
1/4 cup blackberry jam
20 slices brie
3 sprigs of thyme, remove leaves
10 blackberries, halved down middle
20 classic latkes

DIRECTIONS:
1. On a serving board, place your latkes flat on the surface.
2. Place a piece of brie on each latke while its slightly warm so brie melts.
3. Spoon some jam over the brie.
4. Top with a blackberry and some thyme leaves. Enjoy!
