Salami and Eggs Puff Pastry

I don’t know about you, but salami and eggs were a staple in my house growing up. My Dad added onions obviously, but I prefer without. I still whip up a quick meal of salami and eggs almost daily. It is the perfect, high protein breakfast to start the day off right.

As you have come to know, I am not satisfied with the simple. How can I elevate salami and eggs for a brunch party? You know that dish, eggs in a hole? That’s how!

I took parve puff pastry and cut them into large squares. To make the ‘well’ where the eggs will go, I place a muffin liner filled with lentils (or you could use rice or dried beans). Egg wash the puff pastry and sprinkle with freshly cracked pepper and sea salt- bake in the oven.

The key to this dish is getting that salami super crispy so make sure to fry it up first, then add the egg. Place that delicious mixture on top of the puff pastry and voila, something simple yet fancy. I LOVE ketchup with my scrambled eggs so I drizzle the whole thing with ketchup, but you can use salsa or sriracha as well- whatever you wish. Garnish with some green onion and you have a show stopping, Jewish style breakfast worth gossiping about!

Salami and Eggs Puff Pastry

Yield: 8 servings

INGREDIENTS:
4 eggs
8 squares of puff pastry
4 thick slices of salami, cut into small cubes
2 tbsp ketchup
1 green onion, chopped
Sea salt/pepper, to taste

DIRECTIONS:
1. In a small bowl, whisk together the eggs. Set aside.
2. On a baking tray, place the puff pastry squares. Brush with a little of the whisked eggs. Season with sea salt and freshly cracked pepper.
3. Place a paper muffin liner in the middle of each puff pastry square. Fill each muffin tin with lentils (or rice. or dried beans).
4. Place in a 350 degree oven and bake until golden brown, about 15 minutes. Remove from oven and set aside.
5. Meanwhile, in a large frying pan, begin to fry up the salami pieces. Once the salami is crispy and brown, add in the eggs. Season with salt and pepper.
6. Cook the eggs and salami by stirring frequently until eggs are cooked through and it looked like scrambled eggs.
7. Spoon the egg mixture into the ‘well’ we created on each puff pastry.
8. Drizzle with ketchup and garnish with green onion. Enjoy!
