Wedge Salad

As most of you know, I love watching cooking shows. One of my more recent favourite personality’s is Ree Drummond, The Pioneer Woman. Her food always looks so good, so easy and what I really love is she uses a lot of store-bought ingredients mixed with home made. Now that is a true home cook because let’s be real, we all don’t have time to make every recipe from scratch.

Lunches for me, I find is the hardest meal of the day. I am usually too busy running errands to prepare a full meal for myself and tend to just garb something on the go. Or days that I am working, I must find fast meals that will keep me full all afternoon.

This copycat version of The Pioneer Woman’s wedge cobb salad conquers both problems. It’s quick to make as you eliminate the lettuce chopping. It can be easily packed into a lunch container and brought to work. And it is very filling.

I did change some of the recipe, making it a dairy only salad and eliminated the meat. I also added radishes for colour and a spicy bite. I traded out the parsley for dill and instead of her thousand island type dressing, I opted for my favourite bottled ranch dressing. The one I love is Bolthouse Farms- it’s light and flavourful. I love ranch on iceberg lettuce so I just couldn’t have it any other way.

This salad can be an impressive addition to any dinner party or a great lunch on its own. So, give this wedge salad a try because it is worth gossiping about!

Wedge Salad

Yield: 4 side salads or 2 main meals

INGREDIENTS:

1 head iceberg lettuce, quartered
2 hard boiled eggs, sliced
1/2 cup shredded cheddar cheese
8 grape tomatoes, halved
1 avocado, diced
2-3 tbsp edamame beans
1 small cucumber, sliced
2 small radishes, sliced
I green onion, chopped
1 tsp dill, chopped
1/4 cup @bolthousefarms ranch dressing

DIRECTIONS:
1. To assemble salad, place lettuce wedges on a plate.
2. Place all ingredients except for green onion and dill over or around the lettuce.
3. Drizzle the dressing on top of lettuce.
4. Top with green onion and dill. Enjoy!

*** Add more dressing on side of needed.
