'Crab' and Corn Fritters

'Crab' and Corn Fritters

This recipe was inspired by Ina Garten’s lobster and corn fritters. I changed it up a bit and obviously, since I don’t eat seafood, I used the imitation crab as a substitute.

These were super easy to assemble and so delicious. I topped them with sour cream mixed with lemon juice. The perfect lunch!

If you can get yourself some fake crab, than these fritters are worth gossiping about!

‘Crab’ and Corn Fritters

Yield: 10 Fritters (approx.)

INGREDIENTS:
1 pkg imitation crab, chopped
Kernels from 2-3 ears of corn
2 green onions, chopped
1 tbsp dill
1 cup flour
1 tsp baking powder
1 tsp paprika
2 eggs, beaten
1/2 cup milk
Salt/pepper
Sauce
1/3 cup sour cream
Juice of 1/2 a lemon
Butter or oil for frying

DIRECTIONS:
1. In a bowl, whisk together, flour, baking powder, paprika, eggs, milk, salt and pepper.
2. Add in the crab, corn, onions and dill.
3. Using an ice cream scoop, scoop out some of the batter and place in a hot pan with melted butter. Flatten the fritter with a spoon or the back of the ice cream scoop.
4. Continue until all the fritters are golden brown.
5. Serve with sour cream sauce over a bed of arugula. Enjoy!
