Pickled Red Onions

This is the easiest, two second recipe to put together. I will admit, I am not a huge onion fan, but I do love a pickled onion. The sugar and vinegar in the pickling process cuts the spiciness of the onion and turns it into crunchy, tart goodness.

This recipe is for a smaller jar, but feel free to double or even triple the recipe if you need larger quantities. It is also so versatile. You can add it your own herbs or spices to give the onions a different flavour. Some examples would be, rosemary, thyme, mustard seed, coriander seeds etc. I kept it simple this time.

Use these onions as a topping on sandwiches, burgers, tacos, salads, pita and more because these pickled red onions are worth gossiping about!

Pickled Red Onions

Yield: 4-6 servings

INGREDIENTS:
1/4 large red onion, sliced thinly
1/4 cup white vinegar
1/4 cup water
1/2 tsp salt
1 tbsp sugar
1/2 tsp peppercorns

DIRECTIONS:
1. Place the sliced onion into a small jar.
2. Add in the rest of the ingredients. Stir and make sure all the onions are covered.
3. Place in refrigerator overnight. Enjoy!
** You can add different spices or herbs for additional flavour. Examples are rosemary, thyme, mustard seeds, coriander seeds etc.
** Feel free to double or triple recipe for larger quantities.
