Honey Soy Salmon with Ramen Noodles

I am always looking for simple, fast weeknight meals. This is about as easy as it gets. Very few ingredients made into a sauce that will work to both glaze the salmon and flavour the ramen noodles. Win-win.

I make my salmon the way I always make it, sear it in a pan, flip and then place it in the oven. But this time, I brush on some of the glaze beforehand. Meanwhile, I saute up the veggies and noodles. Place in a bowl and top with the salmon. Done!

This is a weeknight meal worth gossiping about!

Honey Soy Salmon and Ramen Noodles

Yield: 4 servings

INGREDIENTS:
2 pkgs ramen noodles, discard soup packets
4 pieces salmon
1/4 cup brocolli, chopped
1/4 cup red pepper, chopped
1/2 cup mushrooms, chopped
1/2 cup bean spouts
1 can baby corn, chopped
2 scallions, chopped
1 tbsp vegetable oil
1 tbsp sesame oil
Sauce
1/4 cup soy sauce
2 tbsp honey
1/4 tsp garlic powder
1/4 tsp ginger powder
Sprinkle chili powder
Sprinkle chili flakes, optional

DIRECTIONS:
1. In a hot pan, sear the salmon, flesh side down until brown. Flip over and brush each piece with some of the sauce. Place in 350 degree oven for 20 minutes until fish cooked through.
2. Meanwhile, in a large pan or wok, saute the vegetables in 1 tbsp of vegetable oil.
3. In a separate bowl, place the ramen noodles. Pour hot kettle water on top of the noodles and cover the bowl until cooked. Drain and set aside.
4. Once the vegetables are starting to soften, add in the sesame oil and the rest of the sauce. Add in the ramen noodles and mix well. Let simmer until salmon is ready.
5. Place ramen noodle mixture in a bowl, top with a piece of salmon. Sprinkle with scallions and sesame seeds. Enjoy!
