Matzo Brei Frittata

Matzo brei is a common, traditional food that most Jews will cook up for breakfast over Passover. It’s super simple- scrambled eggs with matzo pieces in it. Alternatively, you can soak the matzo in an egg mixture and then fry it up like french toast.

I decided to elevate this dish into something fancy that can be served over Passover brunch. Vegetables, cheese, herbs, matzo pieces and egg. Fried in one large ‘pie’ and then sliced.

Everyone is going to want to grab a piece of this matzo brei frittata because it is worth gossiping about!

Matzo Brei Frittata

Yield: 4-6 servings

INGREDIENTS:
4 eggs, beaten
1/4 cup milk
1 tbsp + 1 tsp fresh dill, chopped 
Sprinkle salt, pepper and paprika 
1 piece of matzah 
4 brocollini, chopped 
10 cherry tomatoes, halved 
1/4 cup shredded cheese 
1/2 tsp Italian seasoning 
2 tbsp feta, crumbled 

DIRECTIONS:
1. In a bowl, beat eggs, milk, 1 tbsp fresh dill and a sprinkle each of salt, pepper and paprika. Set aside. 
2. Wet a piece of matzah and place on a paper towel. 
3. In a frying pan, put some oil and start cooking the brocollini. Once slightly soft, add tomatoes and season with salt, pepper and Italian seasoning. 
4. Take the softened matzah piece and break into tiny pieces over the pan. Mix in with the veggies and seasoning and then flatten out so all ingredients spread throughout the pan. 
5. Add shredded cheese on top.
6. Place the egg mixture in the pan and make sure it spreads evenly. Lifting the sides, let some of the thinner egg mixture fill in the bottom. After about 2 minutes place pan in 350 degree oven for 10 minutes until egg is set (Alternatively you can cover and finish cooking directly in pan). 
7. Remove from oven and top with crumbled feta and more fresh dill. Enjoy!
