Ok people!!! What Jew doesn’t love schnitzel? I have perfected this dish to ensure the most amazing, crispy, flavourful chicken schnitzel, every, single, time! This dish is loved by little kids and the elderly alike. It is perfect for any holiday meal or weeknight dinner. It is so versatile, you can use this recipe as a base and let your mind go wild with substitutions and/or additions. You can fry these babies up, bake them off and then reheat in the oven and they will still be crispy! That’s a guarantee.

Crispy, browned seasoned panko with a soft, fluffy white center. My 2 part fry then bake method will ensure perfect results every time. My favourite dipping sauce with this dish is ketchup, but mayo, aiolis and/or plum sauce works just as well. Grab your favourite frying pan and all these ingredients because this schnitzel recipe is one you will be gossiping about for generations.

The BEST Chicken Schnitzel

Yeild: 10-12 thin pieces

INGREDIENTS:
4 chicken breast, cut and pounded thinly OR 2 small packages of prepared raw chicken scallopini
1/2 cup flour
2 eggs
1 tbsp dijon mustard
2 cups panko crumbs
2 tbsp Italian seasoning
1 tbsp paprika
Salt/pepper, to taste
Vegetable oil, for frying

DIRECTIONS:
1. Set up a 3 part dredging system with 2 bowls and 1 large plate.
2. In the first bowl, place flour and season with salt/pepper.
3. In the second bowl, beat together the eggs and mustard.
4. On the plate, mix together panko crumbs, Italian seasoning and paprika.
5. Take a piece of chicken and dredge it in all 3 stations, starting with the flour, then egg and then coat with the panko mixture. Set aside.
6. Continue process until all chicken pieces are breaded.
7. In a large frying pan, pour in vegetable oil until it is about 1/4 of the way up the side of the pan. Bring up to frying temperature.
8. Fry the chicken until brown on both sides and then place on a baking rack over a baking tray.
9. Once all the pieces are browned and placed on the rack, bake in a 350 degree oven until chicken is cooked through, about 20-30 minutes depending on the thickness of the chicken.
10. Serve with assorted dips. Enjoy!
