Mint Aero Chocolate Cookies

I am in full holiday bake mode! And what doesn’t scream holidays than mint and chocolate combined. It also happens to be my husband’s favourite combination so I figured I would get creative.

Originally I wanted to make this recipe with Andes chocolate mints but I could not find them anywhere so I decided to go with the Aero balls- or bar will work as well. Let me tell you, sometimes trying something different than you planned is well worth it!

These cookies came out fabulous. Slightly minty, thin and chewy and just the right amount of chocolaty goodness! Grab your mixer’s because these cookies are worth sharing and gossiping about!

Mint Aero Chocolate Cookies

Yield: 36 cookies

INGREDIENTS:
1 cup packed brown sugar
1/2 cup butter, softened
1 tsp vanilla
2 egg whites
1 cup flour
6 tbsp cocoa powder, unsweetened
1 tsp baking soda
Dash of salt
1/2 cup milk chocolate chips
1/3 cup + 1/4 cup chopped Aero, mint flavour

DIRECTIONS:
1. In large bowl, beat brown sugar and butter with electric mixer on medium speed until light and fluffy. Beat in vanilla and egg white. 
2. Stir in flour, cocoa, baking soda and salt. Stir in chocolate chips and 1/3 cup chopped aero.
3. On a cookie sheet lined with a silicone mat, drop dough by tbsps about 2 inches apart. Slightly press down on the dough balls before baking.
4. Bake in a 375 degree oven for 8 to 9 minutes or until set (do not overbake). Cool 1 minute; remove from cookie sheet to wire rack.
