I LOVE french fries. I mean, who doesn’t? And if you don’t, you are crazy town. I love dipping my fries in ketchup and I love my fries thin. I like a mix of crunchy and soggy ones. The one thing I never truly tried was poutine. A Canadian, not being able to try poutine is a travesty. But being kosher style, I do not mix meat and milk ingredients together. Poutine recipes are made with beef gravy and topped with cheese curds, so a big kosher no-no.

That got me thinking, can I make a vegetarian style gravy? I got to researching and with the variety of vegan and vegetarian style recipes, I came across a mushroom gravy that looked like it would solve all my poutine problems. I definitely tweaked this recipe to make it my own but let me tell you, It is AMAZING!!!! I also love mushrooms so to me, this dish was life changing. The gravy is salty yet earthy. Pour it on top of your favourite frozen fries and top it with shredded cheese. Nuke it in the microwave for 1 minute to melt it all together. Voila! The fries of your dreams.

Mushroom Gravy Poutine

Yeild: 6-8 servings

INGREDIENTS:
1/2 cup mushrooms, thinly sliced
1/4 of an onion, thinly sliced
Salt/pepper, to taste
1/2 cup + 1 cup vegetable broth
1/4 cup butter
2 tbsp flour
1/2 tsp soy sauce
1 pkg frozen french fries
Mozzarella cheese, shredded

DIRECTIONS:
1. In a pan, put 1 tbsp olive oil and saute mushrooms and onions until cooked through, about 10 minutes. Season with salt and pepper.
2. Place mushrooms and onion mixture into a blender.
3. Add in 1/2 cup vegetable broth and blend together until smooth. Set aside.
4. In a sauce pan, melt 1/4 cup butter.
5. Add flour and whisk constantly for 1 minute until combined.
6. Add the remaining cup of vegetable broth and soy sauce white you continue to stir mixture.
7. Add the blended mushroom mixture and continue to whisk until it is well incorporated and thickens.
8. In a small bowl, pour about 1-2 tbsp of gravy over prepared french fries, top with some shredded cheese.
9. Place in microwave for 1 minute, just to melt the cheese. Enjoy!
