Vegetarian French Onion Soup

Today I have a treat for you! This was one of my favourite things to eat growing up. When my Mom would make this, it was such a delight. This recipe comes from my Mom, and the best part is, it is completely vegetarian!

No meat, just ooey, gooey cheese and chunks of bread all over a delicious onion broth. My trick is that I cube up the bread before I place it into the soup, that way you are able to easily get a cube of bread in every bite!

Vegetarian French Onion Soup

Yield: 4 servings

INGREDIENTS:
3-4 medium sized onions, sliced thinly 
6 tbsp butter or margarine
2 tbsp or 2 cubes of beef flavour powder
2 bay leaves
Dash of nutmeg
1 tbsp Worcestershire sauce
Salt and pepper to taste
4 cups of boiling water
4 slices of French baguette per bowl of soup, cubed
1/2 cup mozzarella cheese mixed with 1/2 cup of smoked Gouda, shredded 

DIRECTIONS:
1. In a large pot melt 6 tbsp of butter 
2. Add the onions and simmer on low heat until soft and starting to turn golden- about a half hour- stir frequently
3. Add all the seasonings and stir into onions
4. Add the water, cover and let simmer another half an hour or so until all the flavour merry.
5. In the bottom of a bowl- put some large cubes of French baguette and top with shredded cheese
6. Ladle onion soup over the bread and cheese and then top with more bread and cheese until bowl is full
7. Put under broiler until cheese is melted and bubbling- about 5-10 minutes- keep a close eye so the cheese doesn’t burn.
8. Top with parsley and enjoy!
