Sometimes you need a quick and easy side. This one is fool proof. Using my instant pot for rice has been life changing. I don’t know about you, but whenever I make rice on the stove-top, it is either too dry or watery. I can never get the perfect consistency.

This recipe solves all my problems. Perfect consistency, no fuss, and it tastes great too. I have taken the recipe from the blog Life Made Simple. I made a few minor changes but overall the recipe remains true.

Give this easiest ever rice pilaf a try. It’s the perfect rice side dish worth gossiping about!

Instant Pot Rice Pilaf

Yield: 4 side servings

INGREDIENTS:
1 cup white rice, raw
1/3 cup fine egg noodles, Manischewitz brand
1 tbsp butter or margarine
1 1/2 cup vegetable (or chicken) stock
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp paprika
1 tbsp parsley
Salt/pepper, to taste

DIRECTIONS:
1. Turn the instant pot on the saute setting. Add the butter and let melt. Once melted, add in the fine noodles and cook until most of them turn brown. It may take a few minutes.Stir frequently so it doesn’t stick to the bottom of the pot.
2. Add the rice and give it a good mix and let cook about a minute.
3. Meanwhile, in a small bowl, mix together the broth with the garlic powder, onion powder, paprika, salt and pepper. Pour immediately into the instant pot. Give it a quick stir.
4. Close the instant pot and set valve to seal. Turn saute off and press the manual button. Set time to 3 minutes. Once cooked, allow pressure to come down naturally- can take up to 15 minutes.
5. Open the lid and stir in the parsley. Fluff rice and serve. Enjoy!
