Sabich Platter

I’m not going to lie to you, I had no idea what sabich was until recently. I learned that it is an Israeli street food or breakfast sandwich and I wished I had known about this sooner because it’s delicious!!!!

It is so easy to assemble with some store bought ingredients. The only tedious part is roasting the eggplant and boiling the eggs… so needless to say, it’s pretty easy.

One of the major components of the sabich sandwich is a sauce called amba. It is basically a tangy pickled mango chili sauce. I found it extremely hard to find in my local grocery stores, so I ended up finding a mango chili stir fry sauce, and used that instead. Worked just fine if you cannot find the real deal.

Try this sabich as a platter or a sandwich, either way, it will be worth gossiping about, trust me!

Sabich Platter

Yield: 4 servings

INGREDIENTS:
4 large pitas
2 small eggplants, thinly sliced
1 jar Israeli pickles, sliced
4 eggs, hard boiled
Hummus
Tahini sauce
Amba Sauce
Israeli Salad
2 small cucumbers, small dice
2 tomatoes, small dice
2 green onions, chopped
2 tbsp olive oil
Juice of 1/2 lemon
Salt/pepper, to taste

DIRECTIONS:
1. On a large baking tray, set the eggplant slices in one layer. Spray with cooking spray and season with salt and pepper. Bake in a 350 degree oven for 30 minutes until the eggplant has shrunk and is soft. Remove and set aside to cool.
2. Meanwhile, assemble the Israeli salad. In a small bowl, place all the salad ingredients. Mix well, set aside.
3. To assemble the sabich- either on top (for platter) or inside a pita, spread some hummus. Add in eggplant slices, pickles, sliced egg, Israeli salad and top with tahini and amba sauces. Enjoy!

** Note: For large parties, you can set up a sabich platter with everything separate, and guests can assemble their own pitas as they like.
