Grilled Chicken Pita

I am always looking for easy weeknight meals. This one is so simple to assemble, but you need to be a prepared in advance. I like to marinate the chicken all day to ensure delicious flavour. Once you have your chicken prepped, the cooking and prepping process is quick.

Chucks of marinated chicken, grilled and then stuffed in a pita with all your favourite topping, what else can be more yummy. I filled my pita with hummus, tahini dressing, Israeli salad, lettuce, pickled red onion and pickles but you can choose whatever toppings you like!

Go grab your chicken breasts to marinate, because this grilled chicken pita is worth gossiping about!

Grilled Chicken Pita

Yield: 4-6 servings

INGREDIENTS:
4 chicken breasts, cut into large chunks
1/2 cup olive oil
1/4 cup mayo
1 tsp tumeric
1/4 tsp cumin
1/2 tsp paprika
1/2 tsp garlic powder
Juice of 1/2 lemon
Pita
Topping Ideas:
Israeli Salad
Lettuce
Pickles
Pickled red onions
Hummus
Tahini

DIRECTIONS:
1. In a large bowl, whisk together marinade ingredients: oil, mayo, spices and lemon juice.
2. Add in chicken chunks and mix well until all pieces are coated with marinade. Place in refrigerator for a minimum of 4 hours.
3. On the BBQ grill, with a grilling mat placed on top, grill the chicken chunks until brown on the outside and cooked through on the inside. You will need to mix the chicken around on the mat multiple times. The grilling process should take about 15-20 minutes.
4. To assemble the pitas, place hummus on the bottom of the pita pocket, fill with toppings, add in chicken chunks and more toppings. Drizzle with tahini. Enjoy!
** Alternate cooking process: If you do not have a grill, you can also fry up the chicken chunks on the stovetop in a regular pan. Do the same process until the chicken is brown and cooked through- about 20 minutes.
** All toppings can be store-bought or homemade, totally up to you. Same goes for the pita bread.
