Baked Honey BBQ Chicken Tenders

I am the mom of 2 boys, Jonah and Cole. My boys are very picky eaters and half the time refuse to eat my delicious cooking. I am constantly trying to create recipes they will enjoy but sometimes, I admit, I give in and let them eat the quick and easy processed foods. But this recipe was a hit… well, sort of. My older son loved the crunch from the corn flakes and the little one said, “it’s too crunchy”. Can’t please everyone… or anyone it seems. SO, I coated the chicken in the BBQ sauce and left it like that for the picky one. Now we have a win-win situation.  

This recipe started off as me wanting to make schnitzel but being kind of lazy to go through the coating process. I thought, let me just coat these chicken pieces with some flour and honey BBQ sauce and then I will put it all in a bag to coat. Easy, less dishes and plenty of flavour to please the young and old. I also decided to bake as the corn flakes are already crunchy on their own. I usually use regular corn flake cereal that I smash in a bag, but this time I had the store-bought corn flake crumbs so I used those.

The honey BBQ sauce gives it some sweet and tangy flavour and you still get the crunchy satisfaction from the corn flake crumbs. And my son Jonah, loves it so believe me when I say, these honey BBQ chicken tenders are worth gossiping about!

Honey BBQ Chicken Tenders

Yield: 4 servings

INGREDIENTS:
4 chicken breasts, cut into strips
1/4 cup flour
1/2 cup honey BBQ sauce
2 cups corn flake crumbs
1 tbsp Italian seasoning
2 tsp paprika
Salt/ pepper

DIRECTIONS:
1. In a bowl, place chicken strips and flour and toss together with tongs until the chicken is coated.
2. In the same bowl, add in the BBQ sauce and once again toss with tongs until the chicken is coated. Set aside.
3. In a Ziploc bag, put the corn flake crumbs and seasoning. Shake to mix together.
4. Place chicken, a few strips at a time, into the Ziploc bag, close and shake until coated.
5. Remove coated chicken from bag and place on a greased wire rack on top of a baking sheet.
6. Continue the shake and place process until all the chicken is coated in the crumbs and placed on the wire rack.
7. Bake in a 375-degree oven for 30 minutes or until juices run clear. Enjoy!

*** Any BBQ sauce or flavour of choice will work well with this recipe. I used a bottled honey garlic BBQ sauce.
