Banana White Chocolate Chip Muffins

These muffins are my kids’ absolute favourite! I usually make them with milk chocolate chips but lately my kids have been on a white chocolate kick. So, being that I am the best Mom ever, I decided to do an easy swap and BAM! I think they taste even better with the white chocolate.

I love how minor changes to a staple recipe can create something even better than the original. I have already posted this recipe as my banana bread but I will repost here in muffin form with the white chocolate chips. If you cannot find white chocolate chips, feel free to swap out for diced white chocolate chunks…. oh, I think I’m onto something for the next batch….

These banana muffins will have your kids gossiping, not only about how amazing they taste, but what a fabulous parent you are for baking them!

Banana White Chocolate Chip Muffins

Yield: 20 muffins

INGREDIENTS:
1/2 cup butter, softened or melted
2 eggs
1 cup sugar
1 tsp vanilla
2 large ripe bananas, mashed
1 tsp baking soda
3/4 cup plain Greek yogurt or sour cream
1 tsp baking powder
2 cups flour
3/4 cup chocolate chips (optional)

DIRECTIONS:
1. In a small bowl, dissolve baking soda into yogurt/sour cream and let it settle until it froths up.
2. Beat butter, sugar, eggs and vanilla in a large bowl with a hand mixer until combined.
3. Add in mashed bananas.
4. Add in yogurt, flour and baking powder. Beat until combined.
5. Stir in white chocolate chips.
6. Bake in a 350 degree oven for 25-30 minutes.
Note:
* Alternatively, you can combine all ingredients in a food processor and then stir in chocolate chips.
