Full of Fruit Muffins

I love discovering new recipes. Especially muffin recipes. I saw these muffins on @things.my.kids.wont.eat’s Instagram stories. Lucky for me, I know Jo from @things.my.kids.wont.eat so I gave her a quick message and she sent me over the recipe. It is great to be in a community where everyone is willing to share their recipes.

I kept her recipe the same with a few minor tweaks. She said she only put the berries on the top but I put them both throughout the muffins and on top. My bake time was also a little less and I put in white chocolate chips instead of dark. But all in all the recipe is true to hers.

These muffins are delicious and filled with fruit. Bananas, apples, blueberries and raspberries- and really, you can add whatever fruit or berries you enjoy. These are the perfect mid-day snack or grab and go breakfast. Jo, my friend, you have baked some muffins worth gossiping about!

Full of Fruit Muffins

Yield: 18 muffins

INGREDIENTS:
1 cup brown sugar
2 eggs
2 tbsp melted butter
2 tbsp apple sauce
1 apple, grated
2 bananas, mashed
2 cups flour
2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/4 + 1/4 cup blueberries
1/4 + 1/4 cup raspberries
1/2 cup + 2 tbsp white chocolate chips

DIRECTIONS:
1. In a large bowl, using a hand mixer, mix together brown sugar, eggs, butter and applesauce until combined.
2. Add in the banana and the grated apple.
3. In a separate bowl, mix together flour, baking soda, cinnamon and salt.
4. Mix the dry ingredients into the wet ingredients until combined.
5. Using a spatula, gently fold in 1/4 cup raspberries, 1/4 cup blueberries and 1/2 cup chocolate chips.
6. Scoop batter into paper lined muffin tins sprayed with cooking spray.
7. Top the muffins by scattering ripped pieces of the remaining 1/4 cup raspberries, the whole 1/4 cup blueberries and the 2 tbsp of chocolate chips.
8. Bake in a 350 degree oven for 20-25 minutes, until brown and cooked through. Enjoy!
