Orange Cranberry Muffins

I love swapping recipes with family and friends. It is always great to share what works for you and your family with others. That is why I love sharing all my recipes so much with others. I get pure joy from hearing that others really enjoyed my recipes that I have put out into the world.

This recipe comes to me via a friend, Jen. She made a huge batch for her 4 kids and said it was a complete hit! I had some cranberries in the freezer, so I decided to give it a whirl. I loved them. I love the tanginess the cranberries give to the muffins!

It is always amazing to swap recipes with friends because you never know which recipes, like this one, will be worth gossiping about!

Orange Cranberry Muffins

Yield: 12 muffins

INGREDIENTS:
1 1/2 cup flour
1/2 cup sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 egg
1/4 cup milk
1/8 cup orange juice
1 tsp orange zest
1 cup cranberries (mixed with 1 tbsp sugar)
Turbinado sugar, for sprinking (optional)

DIRECTIONS:
1. In a stand mixer with the paddle attachment, place flour, sugar, salt and baking powder into the bowl.
2. In a large measuring cup, place vegetable oil and egg. Add in the milk and orange juice until the liquid reaches the 1 cup mark.
3. With the mixer on, drizzle in the liquid into the dry ingredients until combined. Mix in orange zest and cranberries.
4. Scoop mixture into a muffin tin lined with muffin cups. Sprinkle turbinado sugar on each muffin.
5. Bake in a 400-degree oven for 20-25 minutes until done. Enjoy!

Note: Easily doubles for a larger batch.
