Homemade Cinnamon Rolls

Guys! I LOVE cinnamon rolls. My favourite are from Cinnabon. How anyone can walk by that shop and not give into the amazing smell is beyond me.

Since I have a bit more time on my hands due to this pandemic, I decided to try this at home. Let me tell you, it was much easier than I thought and now the amazing smells were in my own house! The dough was super easy to use- especially if you roll out on a silicone pad. I used a recipe I found on Pinterest for copycat Cinnabon style buns. I am not a huge fan of the thick icing on top so I decided to make a simple glaze but thickened it a bit by adding in some whipped cream cheese. These did not disappoint!!!

Homemade Cinnamon Rolls

Yield: 15 rolls

INGREDIENTS:
Dough
1 pkg active dry yeast
1 cup warm milk
1/2 cup sugar
1/3 cup butter, softened
1 tsp salt
2 eggs
4 cups flour
Filling
1 cup brown sugar
3 tbsp cinnamon
1/3 cup butter, softened
Glaze
1 cup icing sugar
2 tbsp milk
1 tbsp whipped cream cheese
1/2 tsp vanilla

DIRECTIONS:
1. To warm the milk, place in microwave for 45 seconds. Dissolve the yeast in the warm milk. Set aside to froth up for
5-10 minutes.
2. In a stand mixer, with the hook attachment, mix together sugar, butter, salt, eggs and flour.
3. Pour the milk/yeast mixture into the bowl and mix well.
4. Place the dough into an oiled bowl, cover and let rise in a warm place for about an hour.
5. Meanwhile, make the filling by mixing the sugar and cinnamon together. Leave butter separate for now.
6. Roll out the dough on a silicone mat or floured surface until it is approx 16X12 inches.
7. Rub the soft butter all over the dough and sprinkle with the cinnamon sugar.
8. Carefully, using the long edge, start rolling up the dough into a tight roll. Cut the roll into even slices- about 1.5 inches thick, and place into a rectangular baking dish.
9. Cover with a damp towel and let them rise again for about 30 more minutes.
10. Bake in 350 degree oven for 20 minutes or until golden brown.
11. Meanwhile, make the glaze by whisking together all the ingredients in a small bowl. Once rolls are removed from oven and slightly cooled, drizzle the glaze on top of all of the cinnamon rolls. Enjoy!

Note: To make this recipe into a babka, follow the exact same directions until number 7. Then roll it into a tight roll. Cut the roll in half, in the middle. Take one half and cut the roll vertically down the center. Layers facing up, twist the 2 ropes around each other. Place in a greased loaf pan. Repeat with second half of the dough. You will get 2 babkas. Continue with directions 9-11. You may have to bake it an extra 10-15 minutes. Check if done with a toothpick. Enjoy!
