'MOM' Donuts

It is Mother’s Day and we are quarantined due to Covid-19. This year is really turning out to be a doozy. While I have enjoyed a slower paced life- it is time to get on with real life. The thing I miss most is being able to hang out with family and friends.

Today, we had a socially distant Mother’s Day, where we dropped off gifts and flowers to our Moms and briefly spent time outside talking. It didn’t help that it was also freezing and SNOWING in MAY! So yeah, all in all it’s been great…

So, clearly, I needed a pick me up, and while my husband and kids did make me feel special, we all needed a fun treat. That is how these donuts were born. I had the cookie cutters, I made the dough and fried these babies up! I mixed 2 recipes together to achieve the perfect donuts using the ingredients I had on hand.

I promise you, these were super easy to make and definitely have that wow factor. So, if you want to have all the Moms in your life gossiping and bragging about you to all their friends, you need to whip up these donuts ASAP!

‘MOM’ Donuts

Yield: 20 donuts

INGREDIENTS:
Dough
1 1/8 cup warm milk
1/4 cup sugar
2 1/4 tsp active dry yeast (1 packet)
2 eggs
1 1/4 sticks of butter, melted
4 cups flour
1/4 tsp salt
Glaze
3 1/2 cups icing sugar
2 tsp light corn syrup
1/4 tsp salt
1/2 tsp vanilla
1/4 cup warm water
Food colouring, as needed

DIRECTIONS:
1. In the bowl of a stand mixer, mix together warm milk, sugar and yeast. Let the mixture sit for 5-10 minutes until the yeast is bubbling.
2. Using the hook attachment, mix in the eggs and butter until incorporated.
3. Add in the salt and the flour, one cup at a time until all of it is combined.
4. Allow the mixer to knead the dough, at medium-low speed, for another 5 minutes.
5. Turn off the mixer and allow dough to rest 10 minutes. Remove dough and place into greased bowl. Store dough in refrigerator for a minimum of 2 hours until dough doubles in size (you can prepare dough in advance and leave overnight as well).
6. When ready, remove dough from fridge, punch down your dough, and on a lightly floured surface, roll out the dough until it is about 1/3 inch thick.
7. Using large letter cookie cutters, cut out desired letters and place them each on an individualized piece of parchment paper. Set onto a baking tray. At this point, you can fry up your donuts. But if you have more time, you can cover and set them into a warm area and let rise another hour before frying.
8. When ready to fry, pour oil into a large pot and bring the temperature up to 375 degrees. Place a few donuts into the pot, keeping the small parchment paper on them to hold the shape. As the donuts fry, the paper will come off, remove with tongs and continue to fry until both side are golden brown and the dough is fluffy inside. About 1-2 minutes per side.
9. Remove from oil and place on a wire rack covered with paper towel.
10. Mix all glaze ingredients in a large bowl. Dip the top of the donuts into the glaze, shaking off the excess and placing back onto the wire rack. Sprinkle with sprinkles while glaze still wet. Let cool and enjoy!
